Why not go with STABLE? There's no reason not to run -CURRENT on an IRC server, provided one is qualified to run -CURRENT in the first place. If one is not, the preferred version would be 3.3-RELEASE or newer with my TCP/IP patches (http://www.freebsd.org/~des/software/) applied.
