The 'core' file is a copy of the memory the program was using when it
exited. You can use it for debugging purposes - to find out exactly why the
program quit, and what it was doing (roughly) at the time... There not for
the faint hearted though, and can be very complex... Look up the man page
for 'gdb'...

You can safely delete them...
