The easiest solution is to fill "Reply-To" field of the outcoming message.
Then the field "From" will continue to point on your local host though
if someone tries to send you a reply using Reply command then you will
receive this letter where you want it to be received.

For example:

echo This is the test message | fastmail -s Subj -r Reply-To-address - name@dest.host  
  
or using ELM you just should to do:

export REPLYTO=name@host
