I am no expert at these things, but just try to mount your extra
partition to /var/log .
If everything works well you can enter this into your /etc/fstab
and everything will be in it's place at boot time.
Mind that mounting a partition on some directory will not
overwrite the directory's original content - it will just become
invisible for the time the partition is mounted. So you cannot
destroy anything.
