Unfortunately the servers I have are old HP LPr's 100bt max...Most
likely I will have to do a dual-boot system.=20

Any tools, and advice on benchmarking would be helpful. If there's
anyone in the NYC area that would like to assist with this let me know.

What kind of tests?

How about:
windows file sharing (samba)
ftp transfers (gigabit ethernet?)
www serving
mail server (?)
database server (mysql on both?)
