Say you have in /etc/fstab:

/dev/da0s1a		/		ufs	ro		1	1
/dev/da0s1e		/usr		ufs	ro		2	2

Boot into single user mode and type in:

# mount -o rw /dev/da0s1a /
# mount -o rw /dev/da0s1e /usr

That`s it. 

The commands

# mount /
# mount /usr

won't do it, because they read the settings from /etc/fstab.
