I'm wondering, is it possible/practical/safe to do port "make install"s inside the chroot to avoid having to have pre-built packages? Is there a simpler way? It is definitely worth a try as long as your target machine uses the same architecture as your host (avoid compiling mplayer with optimized flags on an AMD64 if your target is a i486, for instance...)
