I think it would make sense to refer to the pam.conf(5) manual page, which describes the format of /etc/pam.d/su, to which the text of the su(1) manual page refers. (There is, in fact, a pam(3) manual page, but it contains API programming information which isn't useful to someone who wants to configure PAM for the su(1) command.
