As far as I understand, that's not too easy: most drivers' probes return the highest priority, so you won't be able to override them. But doing the other way is easy: just return a lower priority and the UDI driver will be used only if there is no native driver. Actually, if there are multiple drivers returning the same priority then one will be selected at random (the one appearing earlier in the table) and there still will be no conflict.
