I think, it's depending on the order what you install. What you installed  
last will be default for example gedit is already installed:

text/plain=gedit.desktop;

Later, I add Leafpad and it will be:

text/plain=leafpad.desktop;gedit.desktop;

If I change it to:

text/plain=gedit.desktop;leafpad.desktop;

gedit will be default again by the first order.
