Can I stop the OS from mounting fstab and manually edit the /etc/fstab? When you boot, boot into single user mode, mount your fs'es and fix your fstab. You boot into single user mode by pressing something like the space bar when you see the twirling busy symbol (|/-\...). You have to type "boot -s" just in case.
