Maybe you could use CHAT to do this? - i.e. send "AT", expect "OK", send "ATS0=0", expect "OK" etc.? - This can have 'error recovery' (i.e. it keeps trying, or issues an ATZ etc.) as well as logging, and you can probably replace the echo your using in the Cron with it...
