We use a Dell RAID 5 card that emulates an Adaptec at a Web Services provider I work with. This is under BSD/OS, but I imagine it would work fine under FreeBSD also. The RAID is all handled below the level of the operating system, and the emulation seems very complete, and even allows for an auto-rebuild on a Hot-swap. I don't have chipset information with me currently, though. Speak to their server people and they should be able to help you.
