Well, yes and no :)

Assuming a recent 3.3-STABLE and up-to-date ports tree:

	cd /usr/ports/x11/gnome; make all install

should do everything. Grab a few (large) cups of coffee, though.. even
with the distfiles already downloaded, and a fast machine, it takes
"a while" to compile everything.. about an hour on my dual Xeon/400
(though it's doing other stuff in the background).

For GNOME (and, to a similar extent, KDE), I wouldn't even bother
attempting to compile them from the basic sources, unless you like a
whole lot of pain.. Let the awesome ports collection do it all for you :)

At least one from around October 20th or later. A whole bunch of
patches etc. got committed around then to bring the ports collection
GNOME up to "October GNOME (1.0.53)", which is certainly the most
stable version to date.

The handbook provides all the necessary information about maintaining
an up to date ports tree via cvsup and other methods.
