My favorite boards for this kind of thing are laptop motherboards, since they have the connections for a built in UPS, automatic software controlled power management, and the majority of the cost is in the display, with most of the rest of it being in the micro mechanicals that you don't need in an embedded system (PCMCIA slots, keyboard, tiny floppy, docking crap, speakers, microphone, expansion bays for CDROM, etc.).
