fixing instructions in UPDATING

A recent update to net-im/prosody changed the location of Prosody's data
directory and included instructions in UPDATING on how to copy existing dat=
a to
the new location. However, once the package has been installed a new, empty
data directory already exists and the "cp" call won't work as intended.

The attached patch contains an updated "cp" call that should work regardles=
s of
whether the target directory exists or not.

QA: none, as it does not affect any builds.
