If I remember correctly, PHP still uses sendmail as the MTA.  If the
user that Apache runs as doesn't have the rights to "spoof" mail, It
might still show up as unpriviledged user.

Put the user Apache runs as in the /etc/mail/trusted-users file, then
you can appear to be whomever you wish.  (If you have an older install
of sendmail, the trusted user file is named different.)
