The Documentation Project tries to produce professional documentation. A part of that professionalism entails using consistent spelling, not only between different documents, but (in some cases in the past) the same document. In order to do this, it was decided to standardise on American spelling. Anyone with the time and energy is more than welcome to start a "Queen's English" translation that puts docs under en_GB.ISO8859-1 instead of en_US. I've just committed the gist of this to the primer.
