It's very valuable for applications that communicate with the outside world, if for no other reason than because your logs will have accurate timestamps. :) But seriously folks, accurate time is important for mail, and apache has a section in their documentation about the importance of accurate time for a web server. It's also extremely valuable for transaction based systems where more than one client is accessing a given server or servers. There's more information on the www page that was quoted previously, I suggest you give it a read.
