[patch] update gnome-mahjongg to 3.40.1

Update games/gnome-mahjongg to 3.40.1

QA testing:
 - poudriere testport (ok, stable-13/amd64)
 - portclippy (ok)
 - portlint (ok)

- mostly just plist updates
- drop patch no longer needed
- includes upstream fix for generating schemas and icon cache
- now uses gtk4 (and libadwaita)
