You don't need to use a symlink, there's an environment which you can set:
XAUTHORITY.

[mwest@localhost] ~$ su   
Password:
localhost# setenv XAUTHORITY ~mwest/.Xauthority  (assuming root's shell is csh)
localhost# xterm &

Alternatively, use "su -m" rather than plain "su".
