Thank you to all that responded.  I found
http://www.muine.org/~hoang/postfix.html very helpful in explaining an
SMTP session and where and how each restriction gets placed.  I had to
read it several times before I started to understand it.  Then once I
had a small understanding, I used the example from the URL along with
reading the UCE Postfix docs and began to tighten my mailserver.  Telnet
sessions to port 25 and entering command interactively was most helpful.
