For end-to-end, ie, mail client-to-client, use PGP or whatever per msg.

For SMTP server to server, use TLS.  Here´s presentation in French but the 
tech parts are in English, with links to other sites, of how to do TLS with 
postifx:

There is also POP3secure, and HTTPS for encrypted webmail.
