Setting it blank seems to do the right thing. What happens otherwise is that the loader starts booting, then there's some code in it that "handily" parses the currdev's /etc/fstab for you and sets vfs.root.mountfrom to the root (/) entry from the fstab, then you wind up booting your old userland from god knows what kernel.
