Appletalk is a protocol.  Ethernet covers protocols and hardware.

Appletalk runs on a variety of media, including Localtalk (Phonenet) 
and ethernet (Ethertalk).

If you're running Ethertalk, you just plug the two together.  If you're 
running Localtalk, you use a bridge (Gatorbox, Multigate etc)
