This doesn't crash Evolution (but maybe I just don't have the right font
loaded).

Do you have any Hebrew fonts loaded?  That would be a good place to
start weeding out bad fonts.

If you can find a font which causes this, I would open a new bug in
GNOME's bugzilla (http://bugzilla.gnome.org).
