Assuming you want to truncate the ':1' too:
{generate output} | sed -e 's/Xvnc :1 .*/Xvnc/'
Or if you want to keep the ':1' (I'm not clear on that part):
{generate output} | sed -e 's/Xvnc :1 .*/Xvnc :1/'
