Read the qmail docs. Which you want to symlink depends on some things, ie whether you're using qmail's own delivery mechanism, /bin/mail or procmail to deliver your mail; whether you want .forward forwarding. It's all in the qmail docs, /var/qmail/doc which contain a checklist on what to do when replacing sendmail with qmail. If you just read it and do everything it says, you should have no problem.
