At this time, there's one big kernel lock, a few small kernel locks, and no kernel threading, so SMP is not a big win for a system that does a lot of system calls or for an application that is multithreaded. Having said that, I'm running SMP, and I have no major complaints about performance. FreeBSD-current has had some stability problems since around Christmas, so if you want to install it, you should be reading the FreeBSD-current mailing list.
