Sooner or later you'll run into problems unless you're very careful. e.g. the next firefox version might depend on a new version of the libfoo port, so you'd better download the new version of that port before you try and rebuild firefox. This quickly becomes unmananageable to do by hand. It's also very hard to keep up with patches for bugs and security vulnerabilities if you have to remember to download dozens of ports again just in case they've changed.
