Find this line in your /etc/sendmail.cf

# who I masquerade as (null for no masquerading) (see also $=M)
DM

change to 

# who I masquerade as (null for no masquerading) (see also $=M)
DMlogin-id@domain.name
DMfirstname.lastname@domain.name

This will not change your address outside of your host.
