as Toomas already suggested, if you start at the very beginning,
you should really take some alternatives to sendmail. Toomas wrote about
Postfix, so I'll write about the other big player: qmail

A very good instruction for qmail is Dave Sill's "Life with qmail" which
you can find here: http://www.lifewithqmail.org/
