First you need a SCSI-scanner. As far as I know the ones on the parallel port do not work. If you buy a HP-scanner you can use "hpscan", it is in the ports and should work fine with almost any by HP. But there is also SANE, a nice programm which can handle many other scanners. It is also in the ports but for most of the scanners you need special libraries. The one which is right for your scanner can be downloaded from SANE's homepage. I installed it with my Microtek ScanMaker 636 and it works fine. But you need a "real" SCSI-card, the ones delivered with the scanner do most not work.
