I use them to launch network monitors (tcpdump, ngrep), telling the MTA to deliver the queued messages, launch a ping against the remote IP so that it won't disconnect me, and things like that. The error, it seems, was that there was no /etc/ppp/options when I was trying. I then created a small one, and after running pppd it started executing the scripts correctly.
