Look at the make file. Some will bring up a ncurses menu for selection, others will display various options to set, and then some you can look at the make file to see what options it has. I would suggest looking at multimedia/mplayer as a good example of all three. BTW becuase this is a actual ports system you don't have to deal with things getting damaged by manually installing stuff like that. Installing that was is generally best advoided since it cuases problems later on.
