Why can't you do "startx --bpp 16" (or 24 or 32) when you start X (assuming you start X w/ startx). If you use xdm, then start it w/ a -bpp # in your Xservers file. Option 3 is to just set your default color depth to the bpp you want - look through the XF86Config file.
