See the ports-collection, if you install postfix from there it
tells you exactly what to do.

Yes and no... Sendmail will be rebuild, but it will not be enabled.
This is because /usr/sbin/sendmail is a symlink to mailwrapper. If
you read the manpage of mailwrapper, you will see how it works and
why it works.
