I thought I'd throw in my two cents worth, too.

I'm running a pure courier (mail/courier) + mysql setup on FreeBSD w/
7300+ virtual users. In my case, I have two servers clustered to make
spam/virus scanning nicer but you can use one server if you don't scan or
use an efficient scanner.
