Hey Adam,
   To do that type of stuff I use ipf running on the target machine.  You 
would suggest maybe seting up a "firewall" machine inline and count packets 
destine for paticular machines or see if the snmp on your switch has a 
"counter" (running/or can be configed) for each of the ports.
