Dolibarr 19.x supports from PHP 7.x to PHP 8.2.x.

php8, php81 and php8.2 are available from ports for aarch64. I think you are talking about dolibarr-package right?

Well, if you need install it right now because it is urgent for x reason, you could install php 8.2.x dependencies from packages and install Dolibarr from ports (or download and extract Dolibarr from github).
