Actually, the problem is that GNUMail.app depends on the Pantomime library to
speak things like smtp and such. The GNUMail.app port hasn't been updated for
quite a while, and it currently makes no noise about installing Pantomime.
Install Pantomime by hand and you should be all good. It's in the same
directory in the ports tree as GNUMail is.
