In addition to a number of good books (Costales, Brian, et al. Sendmail. O'Reilly & Associates, Inc., 1993. ISBN 1-56592-056-2 would be a good start), there is documentation in /usr/src/usr.sbin/sendmail/doc. (assuming you have the source code distribution, or can access it.
