That's not entirely true, unfortunately.  I've run into at least one 
where the uname value is actually exported from the installation's 
helper binary.  

On top of that, parking a "special" uname on top of the stock RedHat 
base system is asking for trouble.  It makes eg. upgrading the install 
problematic.

Basically, the ROI on returning "FreeBSD" is just so trivially low 
compared to the hassles it causes.
