I initially installed mail/exim port and then did make deinstall. I had hoped that would fix the issues around the compiler but it didn't. When running test versions, I am always comfortable doing it the way I am doing. For instance for exim I manually make my Local/Makefile for the tarball (cp src/EDITME Local/Makefile). For other applications, I always have a file I name build-local-vXX.sh which has my favorite options to pass to configure (./configure --opt --opt2 --optN).
