Take a look at the MAKE_ARGS hash in $PREFIX/etc/pkgtools.conf. You can use things like MAKE_ARGS['mail/postfix']=3D'BATCH=3Dyes POSTFIX_OPTIONS=3D\"SASL2\"' there.
