NFSv3 had many problems in 3.0. 3.1 is better, but there are some issues, which are being actively worked on. You should consider moving this machine to 3.1-RELEASE, since that's the 'production' version of FreeBSD at the moment. 3.0 was a 'beta' release (see the release notes), to get a wider testing audience for the 3.x branch before moving it to the stable branch and depreciating the 2.2.x branch.
