It seems to me that you're well on your way. You'd have to make arrangements to locally mount directories like /usr from the IDE drive, but those details are trivial once you've got the basics down. I did something similar when I moved my stuff from the old IDE drive to the new SCSI drive. I can't give you a step by step because your goals are different, but you are definitely on the right track.
