Update: using the most current FreeBSD 9.0 - 9.2 ZFS instructions on the wiki page for the initial configuration caused the booting to ZFS to work: https://wiki.freebsd.org/RootOnZFS/GPTZFSBoot/9.0-RELEASE including the GNOP trick, since these drives are "advanced format" and greater than 2TB size, and the -a 4k alignment to 4k sectors when creating the ZFS partitions.
