WHat DOS seems to have done is created enough of a valid partition table that disklabel sees 1TB of the 1.1TB disk. So I'm losing a bit of space. I'll cope. It still would've been nice if disklabel could've created the label up to 1 TB, w/o having to resort to DOS, but it's probably not worth investigating a boundary case like that. In any case, I"m functional, and now I understand the underlying limitation, I really didn't understand it was the physical disk limited to 1TB, rather than just the UFS on top of it.
