With Postfix it rewrites to 'origin' that you specify for outgoing mail, that handles one aspect. Using mutt I can also specify my From: and Reply-To: headers . The rewrite can be handled with sendmail as well, I'm just too much of a hack and too lazy to have learned it yet.
